Here are a couple of action shots demonstrating the expert cooking techniques learned during our two weeks with Anna and Simona. First, Anne is making the veal/beef/pork Ragù for the lasagne… a little while later at the same cook station I’m making crepes for the Crespella alla Fiorentina.

Underneath the basil, Red sauce and Bechamel sauce lies the simple crepe… stuffed with ricotta cheese and spinach. I never would have ordered this item off the menu in a restaurant before Simona showed us “The Light.”Anne’s Ragú features prominently in the lasagne with companion layers of: Bechamel Sauce, Sheet Pasta and Parmesan Cheese. Repeat as often as necessary; we stopped at three layers.

The booties make sense – but then Zeus the Cat should also put them on before he walks on our veal cutlets. 😝
